Fresh Breakfast Sausage

Our Fresh Breakfast Sausage is an offshoot of our popular Oktoberfest Sausage, and it’s engineered specifically for your morning feast. While this product utilizes the same fresh Ontario pork shoulders, and award-winning recipe as the Oktoberfest, it’s also a much smaller sausage, sized like a classic Breakfast Sausage. Owing to the quality pork used, you’ll find this is an upgrade on most store-bought breakfast sausages. Furthermore, the meat block is stuffed into a special collagen casing to ensure that the sausage remains straight, instead of curving while cooking, which is ideal for preparing in a frying pan or on an electric grill. Consequently, this sausage is popular at Breakfast, year round, and goes quite perfectly with scrambled eggs and toast, or bacon and ham, or dipped in maple syrup or egg yolk.

Fresh Paprika Sausage

Our fresh Paprika Sausage utilizes a very simple but delicious recipe, which is highlighted by flavours of garlic, fine white pepper, lots of the distinctive sweet red paprika after which it’s named, and a tiny dash of cayenne. Made with fresh Ontario pork shoulder, and natural hog casings, this sausage shines on the grill in the summer, and is best enjoyed on a bun, with your favourite toppings. While it isn’t a spicy recipe, it also isn’t completely mild either, with the white pepper and dash of cayenne giving it tiny bit of a bite.

Garlic Sausage

Our fresh Garlic Sausage is the mildest offering in our listing, and utilizes a simple recipe, which is engineered to accentuate the rich flavour of fresh Ontario pork shoulder. The meat block is stuffed into natural hog casings, and is seasoned with salt, garlic, and onion, with additional hints of fine white and black pepper for added depth. This sausage shines on the grill in the summer, and is best enjoyed on a bun, with the addition of your favourite toppings. It is discernible visually by its pale colour, and the nearly undetectable fine black pepper flecks. In contrast, our “Honey Garlic” sausage appears almost identical at first, but actually has no discernible pepper flecks at all. Like all of our fresh sausages too, this item freezes and thaws well.

Honey Garlic Sausage

Our Honey Garlic sausage is a mild and slightly sweet offering engineered to accentuate the rich flavour of fresh Ontario pork shoulder. Utilizing natural hog casings, and focused on the popular flavour combination of honey and garlic, this sausage shines on the grill in the summer, out of the frying pan in the winter, and is best enjoyed on a bun, with the addition of your favourite toppings. Additionally, this sausage features complimentary notes of onion, fine white pepper, and brown sugar to add depth to the overall flavour profile. It is discernable visually by its pale colour, and complete lack of visible spice flecks. In contrast, our “Garlic” sausage appears almost identical at first, but actually has a tiny amount of fine black pepper added which is visible on close inspection. The Honey Garlic also contains less than half a gram of added sugars, per sausage.

Hot Italian Sausage

Our Hot Italian sausage is a spicy but well-balanced and flavourful execution of a timeless classic. It utilizes a combination of coarse black pepper, and cayenne pepper to give it its bite, along with garlic, caraway seeds, and rich red paprika for depth, colour, and complexity. Made with fresh Ontario pork shoulder, and natural hog casings, this sausage shines on the grill in the summer, and is best enjoyed on a bun, with all your favourite toppings. It also fits nicely into any recipes in your kitchen which call for Italian sausage, or Italian sausage meat; from pizza, to pasta, to casseroles and jambalaya. To discern it from other fresh sausages in our listing, look for the characteristic flecks of coarse black pepper.

Finest Fresh Sausage

This has been our best-selling fresh sausage for over 45 years, and features an award-winning Oktoberfest Sausage recipe. It utilizes fresh, Ontario pork shoulder, natural hog casings, and is seasoned with a combination of fine black pepper, ground caraway, onion powder, and parsley flakes. Visually, this is a relatively pale sausage highlighted by flecks of black and green from the pepper and parsley. It is by far our most popular fresh sausage year round, and it fits into a variety of culinary scenarios effectively, be it on a bun during barbecue season, or boiled and pan-fried for breakfast, or with the meat squeezed from the casing and used as ground sausage meat in your favourite homemade recipes.
