Gelbwurst is a famous Bavarian Style Bologna, traditionally comprised of pork and veal, and accentuated by mild seasonings, most notably featuring nutmeg. It is also historically remarkable for it’s colourful, small-diameter yellow casing, and creamy texture, achieved by emulsification and sometimes the addition of milk-ingredients. Its narrow diameter and creamy texture often makes it popular with children. Our recipe is a modern one: it utilizes quality pork trimmings and a mild seasoning combination which includes nutmeg, white pepper, and the slightest hint of lemon. In line with tradition, it is stuffed into a distinctly narrow, yellow high-barrier casing. Our recipe does not include milk. Pair with fresh bread, butter, and mild cheese for a simplistic and delicious sandwich. Some customers refer to this product as “Veal Bologna”.
Our Garlic Bologna is the most popular item in our cold cut category. It’s made with a blend of pork and beef which is emulsified to a smooth and familiar bologna texture. Also known as Lyoner, which is a Northern European word for the same style of product, our recipe is lightly seasoned with salt, fine white pepper, nutmeg, mace, and plenty of garlic, resulting in a very mild but flavourful offering which is perfect for sandwiches and snacking.

Our Roasted Turkey Breast is a delicious, and lean Premium Ontario Turkey product. It is manufactured entirely with specially trimmed whole turkey breasts, grown and harvested in Ontario exclusively by Hayter’s Farm. Accordingly, you will notice that when sliced, our turkey breast has no blood spots, or voids, and that the meat is pure white, not pink, which are all indicators of superior quality. After being injected with our proprietary brine recipe, this product is stuffed by hand, which allows for the most exacting attention to detail possible. The netting we use imparts a light hickory smoke flavour, and a slightly caramel-coloured outer skin. It is Ready To Eat, owing to how we roast it onsite, nice and slow, to help retain moisture. It is also Low in Fat, and High in Protein, with a Meat Protein Value of approximately 19.8%. It makes for a very healthy and flavourful sandwich meat.
Our Roast Beef is one of the more unique products in our listing. While Roast Beef itself is fairly common, and produced by countless manufacturers, our offering is a Classic recipe which features the Premium Beef Flats first and foremost, coated in a proprietary carmelizing rub. Additionally, the recipe is truly Cure Free, which is what creates the characteristic dark brown colour. There are no tricks: there are neither conventional, nor celery-based nitrites or nitrates involved. This product is also extremely lean, with a Meat Protein value of over 16%. In conjunction with that, we use a unique, Reduced Sodium brine, making this one of the Lowest Sodium products we offer. Enjoy with fresh bread, sharp mustard or horseradish, and Swiss cheese or havarti; this premium deli meat is excellent both warm and cold. Beerwurst is also sometimes spelled “Bierwurst,” but its name is not meant to indicate that there is beer in the recipe, moreso that it is meant to be a perfect compliment to cold glass of beer, either by itself, or in a sandwich. Also known as our “Half and Half,” the Loin Sausage is an elaborate, labour-intensive product, and a standout in our Premium Cold Cut listing. It’s made with a lean and specially trimmed, premium Ontario Pork Loin which is injected with our proprietary brine. The loin is trimmed narrowly, and lengthwise, to stuff approximately half the special smoke-permeable casing, alongside finely ground Tiroler meat block, which is the same blend used in our Polish Sausage, and features the mild but impactful flavours of salt, pepper, garlic, caraway, coriander, ginger, mace, and nutmeg. Accordingly, when sliced, you’ll see one half of the slice as lean, whole muscle, and the other as flavoured, finely ground meat block with excellent particle definition. The end result is a visually attractive Premium Cold Cut, with excellent flavour. The Dutch Loaf is a common North American smoked meat product. Often pork based, and sometimes also including beef, it’s thought that the name itself descends from Pennsylvania Dutch settlers of German origin, but in Germany, the product is known as Leberkäse. Our recipe utilizes a fine, bologna-like pork emulsion, coarse ground dried onion and white pepper as dominant seasonings, pork livers and paprika for colour, and a touch of dextrose to help the surface brown while it’s being baked in one of our smokehouses.
This Cold Cut is a ready to eat powerhouse that’s perfect for sandwiches, both in terms of flavour, and in terms of its characteristic loaf-shape.
“Jaegerbraten” is a word of German origin, and translates to “Hunter’s Roast.” Our recipe for Jaegerbraten utilizes a coarsely textured blend, like our Kolbassa coils, and a distinct loaf-shape, like our Dutch Loaf and Farmer’s Salami. Sometimes referred to as Kolbassa loaf, our recipe utilizes coarse chunks of ham, in combination with a finely ground pork and beef emulsion, which is seasoned with garlic, onion, black pepper, white pepper, coriander, caraway seeds, mace, nutmeg, and a touch of dextrose to help the surface brown while it’s being baked in our smokehouse. This product is designed to taste like Kolbassa, but in a format better suited use in sandwiches than coiled products, owing to its sliceability and characteristic loaf-shape. Alternatively, it can be served in a more traditional manner, in thick slabs, with a mushroom gravy, with a helping of mashed potato on the side.
