18 May Smoked Sausage and Potato Skillet — Recipe

- 1 pound smoked sausage, sliced into rounds
- 4 medium-sized potatoes, peeled and diced
- 1 onion, chopped
- 1 bell pepper (any colour will do), sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
- Heat olive oil in a large skillet over medium heat.
- Add the smoked sausage rounds to the skillet and cook until browned on both sides. Remove the sausage from the skillet and set aside.
- In the same skillet, add the diced potatoes and cook for about 5 minutes, stirring occasionally, until they start to brown.
- Add the chopped onion, sliced bell pepper, and minced garlic to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender.
- Return the smoked sausage to the skillet with the vegetables.
- Sprinkle paprika, dried thyme, salt, and pepper over the sausage and vegetables. Stir well to coat everything evenly.
- Reduce the heat to low, cover the skillet, and let it simmer for about 10-15 minutes, or until the potatoes are cooked through and tender.
- Taste and adjust the seasoning if necessary.
- Garnish with fresh parsley (optional) and serve hot.
This smoked sausage and potato skillet is a satisfying and comforting meal on its own, but you can also serve it with a side salad or some crusty bread. Enjoy!
